All meals are served with fruit and a salad.
Sunday - Hamburgers, oven roasted potatoes
Monday - Some of us had the flu, so it was homemade chicken soup and steak for those who could eat it. - I keep broth in the freezer from when I cook leg quarters. Just defrost, add whatever you want in your chicken soup and season. Hot, homemade soup in less than 15 minutes.
Tuesday - French bread pizza - Got home late and didn't have time to make lasagna as I had originally planned. I usually have french bread from the Wal-Mart day old bread rack in the freezer, so this was quick and cheap.
Wednesday - Valeria's lasagna, crusty bread - We finally found the right noodles at Winn Dixie. They were on sale, so I grabbed a few extra boxes.
Thursday - Chicken paprikash over egg noodles - There was a discussion about paprikash on a message board I frequent, so I decided to try to make it. While it was good, it wasn't as good as I remember from our vacation.
Friday - Smokey Potatoes O’Brian, whole wheat beer bread - My aunt Connie taught me to make potatoes and sausage years ago. I decided to try this recipe and it was just as good as my aunt's. Definitely a keeper!
Saturday - Devilish Sloppy Chicken Mini Sammies, oven roasted potatoes with garlic - Let me start off by saying that I am not a big Rachael Ray fan. Try as I might, I just don't like her. But for some reason, I can't stop watching her show. The other day she made these and I decided to try them. This was the first Rachael Ray recipe that we have tried that is a keeper - but I can assure you that we will not call them sammies! I used beef instead of chicken, by the way.
